Recipe for: Pineapple Cookies From the Kitchen Of: Theresa Shared by: Her nephew in law - George Some pointers from George; "The pursuit of pineapple cookie perfection continues. I haven't fully achieved success, but the last two batches (Batch #1 and "The Son of a Batch") showed some improvement. The attached recipe is based on a somewhat incomplete one we acquired from Aunt Theresa. Be liberal with the flour in order to keep the dough stiff, and I would use a little more sugar in my next batch. Watch the spacing and temp/cooking time depends on your oven."

Georgie. Aunt Theresa sent me two separate batches when I was in Basic at Ft Dix in '68. They were exquisite, and I swear to god. the way she packed them they were still warm when I got them. As I remember they had no icing and were more clumpy than flat..The surface was more craggy than they were smooth. Just thinking about them made my mouth water. I was just given a few cans of chunk pineapple by someone, thought about those cookies, typed "Aunt Theresa's Pineapple Cookies" into my computer, and this is what I got; http://santomassofamily.weebly.com/recipes/theresas-pineapple-cookies. Ain't progress beautiful. I'm looking forward to making some myself. Hope my input helps you in your quest for the perfect cookie. If I make mine, I'll fill you in on how they come out.
